Hot, sticky, fast and sweet

Crazy weather today.
Eerie calm followed by bursts of violent lightning and thunder.  Baseball-sized hail, tornadoes and gusty winds.  It started in the wee hours, around 3:00am, and finally moved through completely by midnight.

I’ve made many a food decision based on weather in the past; from cooking meals on an old Coleman camping stove due to Hurricane induced power outages to boiling corn on the cob or hot dogs outdoors in an electric turkey fryer when the AC broke and the house was too stuffy during August in Alabama.

I don’t bake when its over 80 degrees with humidity at 80% and power is flickering.  What to do when my sweet tooth came knocking?

I hit google for microwave desserts and within minutes found this microwave berry cobbler recipe.

Done in 5 minutes?
Hell yes, I’m in.

I doubled the recipe, used a 6×6 Corning dish with 4 inch sides, and changed the cooking time to 2.5 minutes.  It was pretty darn good for microwave cooking.

Only other change:  make sure I have ice cream in the freezer for the next batch.
