Stovetop Buffalo Chicken

I love buffalo wings.  I could make five pounds and eat them all.

There’s a storm brewing!  The chicken was cleaned out or there would be a photo of the stove top recipe.

I have a great easy recipe for oven wings that I’ve included below.  But tonight is about not heating up the house.

This is Central Alabama and it’s hotter than a two pecker billy goat this early in the season.  The temperature is 73 and humidity is 72% at 9:37 pm.  There is a storm is blowing in and air is so still you can hear the mosquitoes when they get close your face.

Back to my hot buffalo craving.

I color outside the lines.  I always have, so following a recipe to the letter is not a characteristic I have.  (ps – the recipes below – I guessed at the quantity for butter and hot sauce)  I look at recipes, but think of them more as suggestions.  Keep that in mind and tweak any ingredients to your liking.  You’re cooking for you, not me.  But if you want to cook for me, come on!

My first step was slicing two boneless, skinless chicken breasts up across the grain about 1/2 thick pieces.  Lay them out on a cutting board.  Pick a skillet big enough to keep the chicken in one layer and turn the burner on med high.  Add a 1/2 a stick of butter, while the butter is melting, sprinkle half the dry ranch dressing on one side of the chicken.   Add 1/8 cup of hot sauce to the butter, give it a stir and add the chicken seasoned side down. Let it cook for about 3 minutes, sprinkle the chicken with the rest of the dry ranch dressing and flip it over.  Cook for another 3-4 minutes.

It was delicious with chunky blue cheese dressing in a flour tortilla wrap.  A 15 minute stove-top alternative with no bones or mess and no baking for 40 minutes in the heat.

Oven Buffalo Wings Recipe
Five lb.s chicken wings cut in three pieces at the joints. Bag and freeze the wing tips for soup later.  1 envelope of dry ranch dressing, 1/4 cup hot sauce, 1/4 cup butter.  Put the oven on 375.  Melt the butter in a bowl in the microwave 30 seconds at a time so it doesn’t make a mess.  Add the hot sauce.  Dip the chicken in the butter & hot sauce mix then spread out on foil covered cookie sheet.  sprinkle the dry ranch dressing evenly over the chicken and pop it in the oven for 40 minutes.
